Twisted Thanksgiving

“Twisted Thanksgiving” Chef Bill Forester of La Piatto


Need to add a spunk to Thanksgiving dinner? Chef Bill has the ticket! He will start with a roasted beet salad with ham and hard-boiled eggs tossed with watercress and vinaigrette. Your entrée will consist of pepperoni turkey breast which sounds odd. However, when you make a compound butter with pepperoni, garlic, oregano and shallots, it gives a fresh start to your turkey! The harvest blend mashed potatoes include Yukon gold potatoes, sweet potato and rutabaga for an interesting change. The four-onion casserole has been a staple on the chef’s table since he was a child. The grand finale will be a caramel apple tart which has become the chef’s new favorite!
